Pan Seared Flounder In A Lemon Butter Sauce With A Pepper Salad

Tonight was the perfect night to shake things up a bit and have fish for supper. My boyfriend loves fish, but we rarely seem to eat it. Testing out a new recipe, I managed to make a fast and tasty meal!

*makes 2 servings*


2 Flounder fillets

About 1 tbsp butter (or dairy-free butter)

1 Lemon

Pepper Salad:

2 cups spinach 

1 Bell pepper (chopped)

1 Onion (chopped)

Pinch of salt

Pinch of pepper


Thaw out your flounder in advance for roughly 2 hours, or as instructed on the packaging.

In a frying pan on medium heat, add approximately 1 tbsp butter, the juice of a lemon, and your thawed flounder. Check on your fish regularly to make sure it is well cooked (should take about 6-10 min). 

In a different frying pan, turn heat to high and add enough butter to lightly grease the pan. Add your chopped pepper and onion. Let saute until they are soft and brown. 

Gently put the sauteed vegetables on top of your spinach. Sprinkle on some salt and pepper to your salad. 


Once the flounder is cooked, take off the heat, pouring the butter and lemon sauce that is left over on top of your salad (to taste). 

Now, you can sit down and enjoy a delicious, healthy meal!
