Pico de Gallo is a type of fresh salsa. It’s light, a little zesty, and has amazing flavors. This is a salsa you can make a large amount of to whip up fast for your next party, or you can make a little bowl for two for your next date night in. Either way, you’ll probably be wishing you made more!
While my boyfriend was away at work I cracked out a make-shift version of a very common recipe, to surprise him once he got home. There is no cilantro or lime (I don’t usually have that stocked) but I’m certainly not missing it!
Ingredients:
2 cans diced tomatoes with green chilies
Onion (diced)
Pepper (diced)
Cucumber (diced)
Avocado (diced) (optional)
Salt
Pepper
Open the cans of diced tomatoes. Pour into a medium sized bowl.
Dice onions, peppers and cucumbers up small. Put into the same bowl as the tomatoes.
If you feel like dicing up an avocado or two go ahead and throw that in!
Add salt and pepper as desired. Stir.
You’re done! It’s that easy! With some tortilla chips, you now you have a delicious, healthy salsa or side to enjoy through-out the week or at your next party!
