Norwegian Apple Cake (Eplekake)

Best served with a nice hot cup of coffee, this delicious and easy apple cake is the perfect cake for the holiday season! In spirit of my Scandinavian Midwest background I thought it would be super fun to make a cake I had never made before… and it turned out amazing! A mix between an apple cake and a coffee cake you’ll be getting a taste of comfort in every bite. I’ll definitely be making this recipe a new favorite!

Ingredients:

1/2 cups flour

1 cup sugar

2 eggs beaten

3/4 cup soften butter

2 apples peeled, cored and sliced

1 tsp vanilla extract

1 tsp almond extract

1 teaspoon cinnamon

1 Tbsp brown sugar

Directions:

Preheat the oven to 350.

Cream the butter with the sugar until light and fluffy. Slowly add the eggs, flour, vanilla extract and almond extract- mixing as you pour.

Pour mixture into greased 9 inch pan. Peel, slice and core apples. Lay those on top as close to each other as possible.

Sprinkle the cinnamon and brown sugar on top of the apples and place gently in the oven. It will bake for about 60 minutes or until golden brown. Best served warm with a nice, hot cup of coffee.
